Ha-Oh Hototogisu Raman - Ramen like no Others

My second experience at Ha-Oh Hototogisu Ramen really proves the point that the company a person is with and the mood really affects the dining experience. The first time, I had the Crab Ramen and found it nice and unique, and that was it. Though this uniqueness of crab broth stays in my mind. So when I'm at Paragon, I decide to try the ramen here again, and this time, by myself and savour the ramen of my choice, which is King Crab Ramen with Iberico Cha Shu. And yes, the ramen is so good and I can say the crab broth here is definitely one of my favourite ramen broths.

The broth is unique in that it is umami rich yet light on feel, with an extra briny sweetness. It is exactly how I like it. The noodles are thinner than the usual ramen and very smooth in texture, I love it. The Cha Shu is full of meaty goodness. And the Iberico Cha Shu is especially smooth in texture. Ajitsuke Tamago, which is Marinated Soft Boiled Egg, sweetens the deal even more.

Bonito Deep Fried Tofu is very crispy. Though the batter is too thick to my liking.

Smooth, creamy and rich Homemade Creme Caramel is simple yet so good and satisfying.

Ha-Oh Hototogisu Ramen - Unique and Great Broth

For ramen fans, this is a must-try since the crab broth is so unique and is thus worth a try. Made from simmering blue crabs to extract the umami and sweetness of crab meat, the broth is good to drink on its own. Little bits of excitement in taste comes in the form of the lemon and sour cream that actually go very well with savoury soup. The yellow noodles is springy in texture, which is just right. The two thin slices of chashu are flavourful and succulent.

My main issue is there is too few toppings to go with the noodles. Yes, the broth is so good that I can finish the noodles without the toppings, but it just feels not exactly fulfilling without lots of toppings.

The place is more for functionality over super comfort, but the good part is we can quickly get a table despite the crowd due to the efficiency of the staff and the high turnover rate of patrons.

All in all, a good place to get your ramen fix and explore new tastes. And the founder’s story is inspiring, worth a read while there.

Thoughts: Love the broth!
